They eat it at any time, for breakfast, lunch or dinner. You could say that khachapuri is the Georgian version of pizza, but even more versatile, as it comes in 47 different varieties. For example, there is the boat-shaped Adzharian khachapuri, the version from Imereti, which is round and flat and topped with cheese. And Achma khachapuri has several layers, similar to a lasagne. Khachapuri (хачапури) is a traditional Georgian dish of cheese-filled bread. if you not familiar with this delicious dish now it's the time to try. Printable Version: 🤍 Makes 4-6 khachapuris Ingredients: 3 cups (420g) flour 3/4 cup (180ml) water 1/4 cup (60ml) cup milk 2 tbsp (28g) melted butter + 4 tbsp for topping (optional) 1 tbsp instant-dry yeast 1 tbsp sugar 1 tsp salt 450g (15.87oz) shredded mozzarella cheese 250g (8.81oz) shredded feta cheese 6 eggs (2 for cheese mixture and 4 for topping) *traditionally khachapuri made with suluguni cheese. If you can find it, use this cheese. mozzarella is good substitute. Directions: 1. In a mixing bowl combine flour, yeast and sugar. Add water, milk and melted butter and start kneading the dough (you can do it also by hand), when dough is formed add salt and knead 6-8 minutes. Transfer the dough into oiled bowl, cover and let rise for 1 hour. 2. Make the cheese mixture: in a medium bowl put mozzarella, feta cheese and 2 eggs. Mix well. 3. Remove the dough from the bowl and place it onto a floured surface. Cut the dough into 4-6 equal pieces (depends on the size you want). Shape into balls and cover for 20-30 minutes more. 4. Preheat oven to 430F (220C). 5. Roll each dough into 1/8-inch (1/3cm) thick. Shape a boat from the dough and transfer to a parchment paper. Spread equal portions of cheese mixture. Or make the boat in other method: spread the cheese mixture over the rolled dough, close the dough completely by pinching in the middle to close the dough. Flip the khachapuri and cut in the middle with a knife. Open with your fingers. 6. Bake for 10 minutes, after 10 minutes put an egg yolk with a little of egg white (not a whole egg) in the middle, brush the crust with melted butter and bake 2-3 minutes more. 7. Suluguni Chesse or (Queso Fresco) 400g. Brynza Chesse or ( Feta Chesse) 100g. Heavy Cream Yolks ❂ Cooking process: ⁃ Mix egg, sugar and salt. Then add softened butter, warm milk and warm water. Mix well until smooth. ⁃ Sift the flour into a bowl from the food processor and add dry yeast, mix with a spatula. ⁃ Pour the prepared liquid part into the flour and knead for about 8 minutes on a food processor. You can also knead by hand. ⁃ Roll the finished dough into a ball. Dezerter Bazaar (🤍 - One of the most interesting places to go in any city is the local market of bazaar to see the mix of ingredients and things that go into the cooking. Dezerter Bazaar is a great place to see the spices, herbs, and walnuts that make Georgian food what it is. Tamtaki (🤍 - Next we continued on to Tamtaki where Chef Tamta is taking classic Georgian food and making modern sandwiches out of them using top quality ingredients and everything served fresh. Vino Underground (🤍 - Being the birthplace of wine, we couldn’t do a Tbilisi food tour without stepping into a wine cellar for a few drinks! Ezo (🤍 - Finally to complete this meal, we had a giant supra meal - this is a full Georgian meal spread with appetizer, side dishes, and main courses, at Kristo’s very own restaurant! I fell in love with all the varieties and colors, and vegetables - all the walnuts and herbs used in the cooking. Enjoy delicious Georgian Cheese Bread Boat (Adjaruli khachapuri) that just arrived from the region of Adjara along the Black Sea with steam rising from the cheese, egg in the middle, and the bread tantalizing with its golden crust. Khachapuri cheese bread boat is the most popular dish in Georgia, which comes in many regional varieties, shapes and sizes. What makes this khachapuri different is the butter and sunny side-up egg that sits on top of the melted cheese in the middle of a fragrant canoe-shaped vessel of bread. The egg symbolizes the sun and good weather for sailors. Adjaruli khachapuri stands out as a meal in itself. The trick to eating it is first to mix the egg and butter together with a fork, then rip off the sides of the bread and dip them into melting cheese, butter and runny yolk. Typically, the dough for this khachapuri is only from flour, yeast, and water. I add milk and an egg for richness. The Adjaruli khachapuri is very filling; Georgians typically eat them for lunch without any accompaniment. You can grate the cheese a day in advance and keep covered in the refrigerator. Take it out of the refrigerator at least 1 hour before using it. To loosen the cheese filling, stir some water into the cheese as they do in Adjara. Khachapuri is traditional Georgian cheese bread. It is so popular in Georgia that every single region has its own recipe. Most popular recipes use homemade buttermilk which is called matzoni and it is much thinner consistency that your traditional buttermilk. Therefor I am using my own that was left from making my homemade butter. Also, mix of cheeses is very important and in all Khachapuries georgian cheese Sulguni is used as a main cheese with adding couple different cheeses. I have created my own mix that I think would be perfect for this dish. For the dough you will need: 500ml (2cups) of buttermilk 2 eggs 4-5 cups of flour 1 ts salt 1 ts baking soda 1 ts table vinegar You need to make soft dough and let rest for 30 min. Use oil kneading your dough rather than flour. Excess flour will make your dough tougher. For cheese filling you will need: 250g provolone cheese 200g queso fresco 200g feta 2 egg yolks Shred all cheeses and add egg yolk. You can add a little bit of freshly ground black pepper. Your filling is ready. After your dough have rested cut it in half. (We are making two breads) Put a little bit more on a table surface and form one piece of a dough into circle, then using your hands spread it out to whatever size of a skillet you using. Put half of cheese filling and pinch the ends towards center. Turn upside down and spread to a 1 inch thick disk. I will be using a cast iron skillet to cook my Khachapuri. You neet to preheated and without using any oil put your Khachapuri seam down on a dry skillet. Reduce the heat and cook it for about 2-3 min on each side. Make sure it does not burn. Take out and spread butter on it. Repeat the same process for the other piece of dough. Wait a little bit to cut it. You do not want your cheese filling to run out! 🇬🇪 TRAVEL TBILISI: 🤍 🇬🇪 LEARN MORE ABOUT GEORGIA: 🤍 👕 DAVID’S BEEN HERE MERCH: 🤍 After arriving in my 84th country, the Republic of Georgia, I set out bright and early the next morning to begin my exploration of its capital city, Tbilisi! Come with me as I dive into some authentic Georgian food and check out the sights and attractions of Tbilisi, Georgia! My morning began with my guide, Sophie from Travel Tbilisi, who would be showing me around the capital for the next couple of days. Today, we’d be focusing on the historical center! We started off at Freedom Square, which used to be Lenin Square during Soviet times. After the Soviet Union fell, the statue of Lenin was removed and replaced with a statue of St. George, the guardian of Georgia. Then, we saw Tbilisi Sioni Cathedral, which actually dates back to the 6th and 7th centuries, but was destroyed by invaders. The current church was rebuilt in the 13th century. In the very back is the cross, which is made from grave vines. From there, we headed to the Tbileli Caravanserai. It was an 18th-century hotel used during the Silk Road times. Next, we headed down a lane of restaurants with terraces and approached the 4th-century Narikala Fortress, which sits atop a hill. Instead, we saw the Kura River and the Peace Bridge across it before arriving at Metekhi Church, where there’s a statue of King Vakhtang. The 13th-century church has been destroyed and rebuilt, and during Soviet times, it became a theatre. You can see the stones and bricks from different eras on the exterior! Next, we visited Leghvtakhevi Waterfall, a hidden gem near the Sulfur Baths of Tbilisi. There’s a statue of the falcon there, 17th-century bathhouses, and other 19th-century buildings. At the end of the boardwalk along the springs is Leghvtakhevi Waterfall. The buildings you pass on the way are built on the edges of cliffs and exhibit typical Tbilisi architecture. Next, we drove two minutes to Rigi, a rustic but modern restaurant serving traditional Georgian cuisine. They were baking bread in a tone oven, as well as dedas puri (a type of bread). They also were making sulguni cheese, Megreli khachapuri (cheesy bread made with 3 cheeses), tkemali (an herbal vegetable soup), and khinkali (Georgian dumplings) filled with beef and pork. At our table, we started with three types of chacha, which is similar to grapa and raki. To eat the khinkali, you take a tiny bite and suck the soup out. Then, you eat the khinkali except for the little handle. We also had mountain pork, dedas puri, sulguni cheese, eggplant, and Megreli khachapuri. The khinkali was thick and the meat inside was juicy and full of onion flavor. Next, I jumped on a craft beer and the khachapuri, which was incredible! It was almost like a pizza! The three cheeses were creamy and really filling. The chachas were strong! The pastes with eggplant; sulguni with puri; and walnut salad with cucumbers, tomatoes, parsley, mountain pork, and sunflower oil were amazing. The pork was similar to prosciutto, and the salad was very refreshing. We also got some kebabs and shkmeruli (fried chicken in a garlic-milk-cottage cheese sauce). The shkmeruli was insane and reminded me of creamy chicken pasta dishes my Italian grandmother used to make. The kebab was wrapped in thin, lavash-like bread and was full of light but flavorful spices. The leeks with walnut were amazing, but the kind with the plum sauce was better. I also loved the eggplant with peppers and creamy paste. The tone puri with hazelnut paste was also really great with some cheese. We finished with Pelamushi, a frozen grape juice dessert with sunflower, cherry tomato sorbet, and white chocolate. Where have you been? Khachapuri with Tarragon (Khachapuri Tarkhunit) Tarragon (tarkhuna) gives this khachapuri a unique flavor. Georgians are big fans of tarragon; after cilantro, it is the second favorite herb. Sometimes I think that romantic Georgians give such preferential treatment to tarragon because they associate it with spring, renewal, hopes, and expectation of the new season. Tarragon is eaten fresh with pungent cheese wrapped in thin lavashi bread. It also stuffs fish, is used in mushroom and meat stews, added to the pickled cucumbers, even a bright green soda is made from it. It also appears in this khachapuri. Out of habit, Georgians still call it khachapuri although the tarragon replaced cheese in the filling. Some refer to it as tarragon pie. Never mind the name, it is delicious. It can be made with any type of dough, but especially good it is when made with unsweetened puff pastry or yogurt pastry. Joghurt, Mehl und Hefe 5 Minuten leicht kneten. 2. Salz und 1 Schluck Wasser dazugeben. 3. Weitere 5 Minuten auf höchster Stufe kneten. 4. 1,5 Stunden - 2 Stunden den Teig abgedeckt ruhen lassen. 5. Danach den Teig auf die Arbeitsfläche geben und vorsichtig (ohne viel kneten/drücken) zu 6 kleinen Teiglingen formen. Pro Teigling 200-240g. 6. Abdecken und 30-40 Minuten ruhen lassen. 7. Teige einzeln ausrollen, füllen, zudrehen, ausrollen und einfrieren oder sofort in einer beschichteten Pfanne, ohne Fett, braten. Jeder Seite 8-10 Minuten. Bis eine schöne Farbe entsteht. 8.
