The filling ingredients for gimbap may vary but normally include spinach, ham, crab stick, fish cake, carrot, egg, pickled radish, etc. The main difference between gimbap and Japanese sushi is the use of vinegar. While cooked rice for Japanese sushi is flavored with sweetened vinegar, cooked rice for gimbap is seasoned with sesame oil and salt. Today I tried making Bibimbap with whatever I had at home. #bibimbap #korea #koreanfood Ingredients ⁃ 1 cup of cooked rice ⁃ 1/2 a carrot, grated ⁃ 1/2 a cucumber, grated ⁃ 2 red chillies, sliced ⁃ leftover stir fried chicken and capsicum ⁃ 2 tbsp of Gochujang ⁃ 2 tsp of white vinegar ⁃ 1 fried egg Method 1. Add rice to a bowl 2. Top with carrot, cucumber, chillies, stir fried chicken and capsicum and a fried egg 3. Mix the Gochujang and vinegar to make the sauce 4. Drizzle the sauce over the bowl and mix everything 5. Enjoy!

Prepare Dough: -In a bowl add fine flour, all-purpose flour, salt & mix well. -Add yogurt, gradually add water, mix well & knead until dough is formed. -Add ghee & grease the dough with it, cover & let it rest for 15 minutes. -Add ghee in a tray & spread evenly with the help of brush. -Grease hands with ghee,take a small dough (130g), make a smooth ball & place on ghee greased tray. Brush ghee over the dough balls, cover with cling wrap & let them rest for 10 minutes. -Grease the dough mat with ghee, place a dough ball & with the help of greased hands spread evenly in round shape. -Add & spread ghee then sprinkle flour on it & cut the dough in stripes with the help of cutter. -Gather all layers together and stretch slightly then roll & twist the dough into a ball. -Cover with a cotton cloth & rest for 15 minutes. -Grease hand with ghee and press gently with both hands to spread the dough to make a paratha. -Heat griddle, add ghee & let it melt. -Place paratha and fry on medium low flame. Full written recipe for Thepla Prep time: 15-20 minutes Cooking time: 15-20 minutes Serves: 4-5 people Ingredients: Dough FENUGREEK | मेथी 1 BUNCH (70-80 GRAMS AFTER CLEANED) WHEAT FLOUR | गेहूं का आटा 1.5 CUPS GRAM FLOUR | बेसन 2 TBSP WHITE SESAME SEEDS | सफेद तिल 2 TSP ASAFOETIDA | हींग 1/4 TSP CAROM SEEDS | अजवाइन 1 TSP SALT | नमक TO TASTE OR 1 TSP TURMERIC POWDER | हल्दी पाउडर 1/2 TSP KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TSP GINGER GREEN CHILLI PASTE | अदरक और हरी मिर्च की पेस्ट 2 TBSP OIL | तेल 2 TBSP CURD | दही 1/4 CUP WATER | पानी AS REQUIRED OR 2-3 TBSP (ADDED GRADUALLY) OIL | तेल A DASH For Cooking WHEAT FLOUR | गेहूं का आटा OIL | तेल AS REQUIRED Method: Take a bunch of fresh methi & sort it by separating the leaves from the stalks, transfer all the methi leaves into a sieve, you need about 80 grams of methi leaves for this recipe. Wash the methi leaves using water 2-3 times until its clean, drain out all the excess water & transfer the washed leaves on a clean kitchen towel & pat dry it using another kitchen towel or tissue until its dry. Further finely chop the methi, you will get around 1.5 cups of chopped methi, transfer the chopped methi into a large bowl. Further add the wheat flour, glam flour & all the remaining ingredient of the dough except for the water & mix well. Then gradually add water, a tablespoon at once & knead a semi-soft dough, make sure that the dough is not too stiff or too soft, you will only require 2-3 tbsp of water depending on the moisture in the curd, you can sprinkle some wheat flour & gram flour if the dough gets too moist to adjust the consistency. Once a semi-soft dough forms, shape it into a round doughball & drizzle some oil to coat the surface, cover & let the dough rest for 10 minutes. After the dough has rested, divide it into equal sized portions & form it into small roundels, keep them in a large bowl & cover them while you roll out the theplas. Take a roundel, coat it using wheat flour & roll it out into a thin thepla, you can dust more wheat flour if required. Roll out 4-5 theplas or as required & stack them onto a clean kitchen towel. Set a tawa over high heat & let it get hot. Place the thepla on the hot tawa & cook briefly from both the sides by flipping it 1-2 times over high flame. Then add oil & cook again from both sides quickly, make sure that the flame is high throughout the process, if the thepla stays on the tawa for a long time then it will crisp up & not remain soft. Chicken White Karahi Recipe in English: Ingredients: • Oil 3-4 tbs • Ginger garlic ½ tbs • Green chili paste 4-6 • Chicken ½ kg • Salt 1 tsp or to taste • Yogurt 3/4 cup • Black pepper 1 tsp • Cumin 1 tsp • Coriander 1 tsp • Ginger (julienne cut) 2 inch piece or as preferred • Garam masala ½ tsp • Tetra pack cream 4 tbs • Green chili 2-3 • Lemon juice 1 tbs (optional) Directions: • Heat oil in a wok, add chicken and fry until it turns golden. • Add ginger garlic paste, green chili paste and salt. • Cook for 6-8 mins on medium flame. • In bowl, add yogurt, black pepper, roasted and crushed cumin and coriander crushed and mix well. • Add yogurt in chicken and mix well. • Cook for 6-8 mins or until yogurt water dries out and chicken is tender. • You can add 1-2 tsb water if required. • Add ginger (julienne cut), garam masala lemon juice, and Tetra pack cream 4 tbs - cook for few mins. • White chicken karahi is ready to serve with roti chapati or naan. Recipe in Urdu: Ajza: • Oil 3-4 tbs • Adrak lehsan ½ tbs • Hari mirchi paste 4-6 • Chicken ½ kg • Namak 1 tsp or to taste • Dahi 3/4 cup • Kuti kali mirch 1 tsp • Bhuna kuta zeera 1 tsp • Bhuna kutra dhania 1 tsp • Adrak • Garam masala ½ tsp • Tetrapak cream 4 tbs • Hari mirch 2-3 • Lemon juice 1 tbs (optional) Bananey ka Tareeka: • Aik karahi mein tail garam kareen aur us me chicken daleen aur pakaeen . • us mein adrak lehsan ka paste, hari mirch ka paste aur namak milaeen. • 6-8 mins ke liye dheemi anch par pakaeen . • Aik pyala leen, dahi, kali mirch, zeera kuta howa, dhaniya kuta howa daleen aur sahi se milaeen. • Dahi ko chicken main shamil karain. • 6-8 mins ke liye pakaeen jub tak dahi ka pani sukh jaee aur chicken gal jaee. • 1-2 tbs pani bhi shamil karsakte hai. • Adrak (juliene cut), garam masala, leemo ka rass, aur Tetra pack cream daleen aur thori dair ke liye pakaeen . • White chicken karahai tayyar hai aur isse roti, naan aur chapatti ke sath khaya ja sakta hai.

Beef Resha Kabab Recipe in English: • Ingredients: • Nutmeg ½ pc • Cloves 8-10 • Black cardamom 2 • Cinnamon sticks 2-3 • Cumin ½ tbs • Star anise 1 • Black pepper 10-15 • Boneless beef ½ kg • Gram Lentil 1 cup soaked and boiled • Button chilies 10-12 • Green chili 2-3 • Mint leaves ½ bunch • Ginger paste 1 tbs • Garlic paste 1 tbs • Salt ½ tbs or to taste • Water 1.5 litre • Eggs 1-2 • Oil Directions: • Take a square piece of muslin cloth. Add whole spices: nutmeg, cloves, black cardamom, cinnamon sticks, cumin, star anise, black pepper and tie it in the muslin cloth. • In pressure cooker add beef, button chilies, ginger and garlic paste, salt and water and pressure cook beef for 30-40 minutes. Check beef if it’s not tender, add more water and cook for 10-15 more or until beef is tender. • Now take out whole spice from the beef. Add beef mixture in a chopper, add green chilies, mint leaves, gram lentil and chop well to a smooth mixture. If mixture is very dry add a little water and chop again. Check consistency of mixture and then add egg if it’s very soft add one egg otherwise 2 eggs can be added. • Now make kababs from the mixture and fry until golden brown. Recipe in Urdu: • Ingredients: • Jaifil ½ pc • Long 8-10 • Badi elaichi 2 • Daar chini 2-3 • Zeera ½ tbs • Badyan ka phool 1 • Kali mirch 10-15 • Boneless beef ½ kg • Chana daal 1 cup soaked and boiled • Sabut lal mirch 10-12 • Hari mirch 2-3 • Podina ½ ghithi • Adrak paste 1 tbs • Lehsan paste 1 tbs • Namak ½ tbs or to taste • Pani 1.5 litre • Anda 1-2 • Oil Banane ka tareeka: • Mulmal ka kapra le kar us main sabut garam masala: jaifil, long, badi elaichi, daar chini, zeera, badyan ka phool, kali mirch shamil karke ek potli ki tarah bandh lain. • Pressure cooker main beef shamil kare, sabut lal mirch, adrak lehsan ka paste, namak aur pani shamil kar ke 30-40 minute pressure cook karain. Gosht check karke dekhen agar sahi na gala ho tu thora paani aur shamil karke gosht gala len. • ab garam masala ki potli nikal lain. Chopper main gosht aur baki mixture shamil kar lain. Hari mirch, podina aur daal shamil karke achi tarah mixture ko chop kar lain. Agar mixture buht ziada khushk ho tu thora sa pani bhi shamil karsakte hain. • Mixture check karain agar ziada naram ho tu ek anda shamil karain doande shamil kar lain. • Ab mixture se kabab bana kar oil main fry karlain.
